Banana Crumble Muffins

I n g r e d i e n t s :
Batter:

2 ½ bananas
-
1 ½ cups of flour

¾ cups white sugar

1 tsp baking soda
-
1 tsp baking powder
-
½ tsp salt
-
1 egg
-
â…“ cup melted butter (unsalted)

1 tsp pure vanilla extract

1 tsp cinnamon
-
1 cup chopped walnuts (optional)
Crumb Topping:
-
½ cup brown sugar
-
¼ cup flour (plus a little extra)
-
¾ cup cinnamon
-
2 tbls butter
Steps:

Preheat the oven to 375 degrees F

In a large bowl, mix flour, baking soda, baking powder, and salt. Whisk together.

In a separate bowl, mash the bananas. Add sugar, egg (already beaten), melted butter, vanilla, and cinnamon. Mix.

Create a well in the flour bowl. Pour the banana mixture into the well and mix until combined. Add chopped walnuts here.

To make the crumb topping, combine brown sugar, flour, cinnamon, then add your melted butter. Mix with a fork until crumbly. If the mixture is too liquidy, add 2 tsp of flour until crumbly.

Lightly grease a muffin baking pan or line with muffin paper liners.

Use a ¼ cup to scoop the batter into the muffin tins and add the crumb topping generously to each.

Bake for 15-20 minutes, or until a knife stuck in the center comes out clean.

Take out of the oven, let sit in the muffin tins for 5 minutes, and then take a knife around the edges of the muffins and put them on a cooling rack.
