Scallop Potatoes:

  • 8-10 Red Bliss potatoes

  • 2 cups heavy cream

  • 2 packages of Boursin garlic and herb cheese

  • Salt

  • Pepper

  • 1 cup Asiago cheese

Steps:

  1. Preheat oven to 425 degrees F

  2. In a pot over medium-low heat, melt Boursin cheese with heavy cream until creamy and smooth.

  3. Use a mandolin to thinly slice your potatoes; no need to peel them, but make sure they are washed.

  4. In a lightly buttered disposable baking tray, add a layer of potatoes to the bottom, seasoning them generously with salt and pepper before continuing.

  5. On top of the potatoes, pour the heavy cream + cheese mixture.

  6. Continue this layering process, alternating in between the potatoes and the heavy cream, making sure to season the potatoes each time.

  7. When you are finished layering, sprinkle your asiago cheese over the top layer.

  8. Cook in the oven for 1 ½ to 2 hours, until most of the liquid is absorbed. Serve warm.

  9. Enjoy!
