Vanilla Cupcakes

I n g r e d i e n t s :

Cupcakes:

  • 2 ½ cups all-purpose flour

  • 2 cups sugar

  • 3 tsp baking powder

  • 1 tsp salt

  • 1 cup milk

  • ½ cup vegetable oil

  • 1 tbsp vanilla extract

  • 2 large eggs

  • 1 cup water

 

Steps:

  1. Preheat the oven to 350 degrees F.

  2. In a large bowl, sift flour, sugar, baking powder, and salt. Mix until combined.

  3. In a separate bowl, mix together your milk, vanilla extract, vegetable oil, and eggs.

  4. Add the wet ingredients into the dry ingredients half at a time, mixing in between each addition. 

  5. Slowly add water, mixing continuously. By the end, your batter should be smooth and runny with everything fully combined.

  6. Line cupcake pans with liners (or grease them), and take an ice cream scoop (this is my favorite trick to get the right size cupcake) to scoop the batter into each slot.

  7. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.

  8. Follow the frosting recipe below or use a store bought frosting and frost your cupcakes.

  9. Enjoy!

 

Frosting:

  • 1 cup butter

  • 1-2 tbsp milk

  • 2-3 tsp vanilla extract

  • ½ tsp salt

  • 4 cups powdered sugar

 

Steps:

  1. In a large bowl, use an electric hand-mixer to cream your butter and vanilla until smooth.

  2. Sift your powdered sugar 1 cup at a time, mixing on a low setting each time to make sure it's combined.

  3. Add your milk a little bit at a time until your frosting looks the way it should!
